Hydnum Repandum, or Hedgehog Mushroom...
These unusual-looking mushrooms are in season now, and I have been using them at the farmer's market. Last year we were treated with the Chocolate Hedgehog Mushroom, which has flavors of clove and cocoa when cooked! Unfortunately they only flourish after a good Matsutaki season, which didn't happen this year. This is a description of Hedgehogs from Antonio Carluccio's Complete Book of Mushrooms:
This excellent mushroom, found throughout North America and Europe, has one distinctive characteristic: instead of gills or pores, which most other edible mushrooms have, the spore-producing hymenophore consists of spines pointing downward from the underside of the cap - hence the name "hedgehog." It is also known as "sweet tooth." As far as texture and taste are concerned, it is very similar in character to the chanterelle. When cooked, bitterness disappears and mushroom is tasty with a pleasant aroma.
